This was last night’s dinner and it was SO GOOD! I had 2 big bowls! My sister loved it too.
Southwest Salad with Creamy Cilantro Lime Dressing
Tangy, creamy, crunchy, DELICIOUS. My sister and I love this main-course salad! This would also be great to layer in mason jars and keep in the fridge for to-go salads!
- Romaine lettuce, chopped
- Cherry tomatoes, halved
- Avocado, cubed
- Corn kernels
- Black beans
- Tortilla chips, crushed
- Cilantro for garnish
- 1 bunch cilantro, tough stems removed
- 1/2 cup good quality mayonnaise, or homemade mayo
- 2 cloves garlic
- Juice of 1 lime
- Pinch of salt
- Place lettuce in a bowl.
- Arrange the tomatoes, avocado, corn, black beans, and tortillas in stripes, or in piles on top of the lettuce.
- Drizzle with the dressing, and sprinkle with cilantro.
